1. Cook and mash the potato.
2. Heat the butter and cream and add the seasoning then beat into the mashed potato, fold in the egg yolks and place into a piping bag ready for topping the fish pie.
Sauce for fish pie
1. Heat the butter in a saucepan then add the flour and cook out.
2. Add the milk in small amounts until a smooth sauce is formed then add all the other ingredients and cook out until velvety and smooth – cool and set to one side.
Fish pie
1. Place sauce into individual ovenproof dishes, then add wilted spinach, blanched peas and the fish.
2. Top with mash and grated cheese and bake until cooked.
