  • ChalkStream® Trout - 5 pce
  • Red Onion - 100gm
  • Lemons - 1
  • Sea Salt - 3gm
  • Red Chillis - 10gm
  • Blood Oranges - 8 pce
  • Olive Oil - 50ml
  • Micro Coriander - 8gm

1. Finely dice the red onion and place into a bowl, then add the juice from one lemon, add finely diced red chill and salt then the juice from 3 blood oranges.
2. Peel the remainder of the oranges and dice, then add them to the onion mix, drizzle in the olive oil and set to one side.
3. Place the dressing onto a plate and slice the chalk stream trout, lay into the dressing and top with segments of blood oranges, olive oil and micro coriander
